The rehydration potential of zea mays juice compared to carbohydrate-electrolyte beverage

The purpose of rehydration is to replace fluid and electrolyte losses. Carbohydrates and sodium are the main nutrient sources for rehydration. The presence of protein aids the rehydration process and thereby promoting muscle synthesis. Zea mays had been identified as one of the potential food sources that could be an alternative recovery beverage. The aim of this study was to assess the potential of Zea mays (ZM) juice as an alternative rehydration beverage. A total of 15 male participants were involved in this study. They were required to cycle to 70-80% of their age predicted maximum heart rate until they were dehydrated (1.8-2% body weight loss). Then they were given either ZM juice or CE drink in an amount representing 150% of their initial body weight loss. After 4-hours of rest with no other food allowed, their USG and percentage of fluid retention were calculated. Results showed that ZM juice had better retention and demonstrated well hydrated USG readings compared to CE drink. .....

Development of zea mays juice as an alternative recovery beverage for exercising people

The purpose of this study was to develop the Zea mays (ZM) juice as an alternative recovery beverage for exercising people. The study consisted of descriptive formulation and assessment of ZM juice, followed by experimental study examining the effect of ZM juice on rehydration, sports performance and muscle recovery among recreational individuals. A total of 461 male and female participants were randomly selected with criteria of physically active, did not consume sports supplements and had no injuries. Data were analyzed using descriptive, paired t-test and two ways factorial ANOVA. ZM juice contained 9.8 g carbohydrate, 2.4 g protein and 64.3 mg sodium which met the recovery requirement. The beverage acceptance rate was 75% among the participants. Rehydration assessment showed that ZM juice (M = 48.0%, SD = 18.7) significantly retained fluid better than CE drink (M = 28.5%, SD = 21.7), t(14) = -2.23, p = .042 and produced less urine (M = 1022, SD = 415.18) than those in CE drink grou.....

The preliminary formulation of zea mays as exercise recovery gel

Recovery nutrition play an important role in body adaptation towards exercise and sports performance. Combination of different saccharides and amino acid content fasten recovery result which promotes exercise adaptation and prepared athletes’ body for next session of exercise. There are abundant of recovery supplement available but most of it was milk base products which could contribute to lactose intolerance negative effect among consumers. Therefore, Zea mays which is plant based is propose as an alternative food supplement for exercise recovery choices. Zea mays kernel was grind for the juice and homogenized with sugar, fructose, xanthan gum and pectin. The mixture been cook for 20 minutes using double boiler at 95°C. The gel sample then fill in the gel pack and keep at room temperature for shelve live assessment. Proximate analysis showed the presence of sucrose (20.5g/100g), fructose (9.2g/100g) and total carbohydrate is 51.5g/100g. Essential amino acids that presence is argin.....
